Super Easy Hot Chocolate

I find it so incredibly to keep myself eating healthy this time of year! People around me are constantly baking and cooking delicious food, and being the foodie that I am its my instinct to dig  right in! I know I have made a lot of allowances lately, and I'm already feeling squeamish about the long (and noticing the short) term effects of it. So despite the holiday season, I need remember why I do this! Earlier today I was craving hot chocolate! It seems every winter I go through a phase where in preparing for the long, cold winter I remember my love for hot chocolate - and out of that love this was created!






It's hard to get a good picture showcasing hot chocolate, but this was delicious and probably the easiest thing I have ever made, and only used three ingredients! I am also finding more and more that I love coconut milk, there was a while there were I didn't use milk at all, but since removing grains completely from my diet it seems that I am actually not allergic to dairy anymore - it was just the grains causing the problems all along! Despite being able to eat dairy now, I still choose not to even in raw forum because dairy actually inhibits a persons ability to sing - and since that is was I do - it is a no go!

 Ingredients:

1 Mug of Coconut Milk
3 heaping spoonfuls of Raw Cocoa Powder
 1 Large spoonful of raw honey

Simply heat the coconut milk on the stove over low medium heat, until it begins to foam. Then stir in the cocoa powder, and melt in the honey! Pour into a mug and enjoy!

Coconut Flour Pancakes

I know this is not anything that I said I was planning on doing in the next few weeks, but I woke up this morning and it was just a pancake kind of day!


Every time I try to make pancakes, I'm always left disappointed with how flat and soggy they get - but not these! These were delicious! They were quite dense, but that could easily be changed by whipping the egg whites, with a cakey center! Usually when I make pancakes, there are one or two extra and they are never good enough for me to go back to and eat later! But not these - I intend on saving these for breakfast tomorrow morning, toasted with a little almond butter will be great!

So here we are! 

This recipes yields 5 sand dollar size pancakes.

Ingredients:

1/4 Cup Coconut Flour
1/4 Water
1/8 Coconut Milk (You could probably use all coconut milk instead of water, but I ran out!)
2 Large Eggs
1/2-1 TBS Raw Honey, depending how sweet you want them.
1 TSP Pure Vanilla

Directions: 

Preheat a pancake grill to medium heat - don't go too hot or the outside will cook before the inside, leaving the middle uncooked. If you don't a pancake grill, use a pan with a little bit of coconut oil for frying! I. In a small bowl whisk egg in a bowl until foamy. Add in the honey, and vanilla. Mix well. Add in the coconut flour, and mix. It should be quite thick at this point. Next put in the coconut milk and water - start with 1/4 of a cup, then add 8th if needed. It should be quite thick.be quite thick at this point, almost the texture of a traditional cake batter. Maybe a bit thicker.

Put sand dollar sized spoonfulls of batter onto the grill, and wait until batter has firmed up, then flip until cooked through!

Serve with blueberries and maple syrup! Enjoy!

Cooking Frenzy, Coming Soon!

Since starting this blog, I haven't posted nearly as many recipes as I'd like! However, that is soon going to change! With the semester coming to an end, (only three exams left!), a new shipment of meat coming in on Saturday (I haven't had much meat lately...) , the Holiday season and an entire month till the next semester....I know I'll being going a little nuts over here, not only preparing for the holidays but also a crazy next semester!

I am also looking forward to recreating many of the German Christmas treats I grew up with as a kid!There are a few things that I looked forward too every Christmas and are now no go's - so this year I plan to make my own versions of them!

On another note: It's 3:00 AM and I can't sleep. Which is why I'm writing this rather useless post.

Blueberry Banana Pumpkin Muffins (Grain Free, Dairy Free, Sugar Free, Nut Free)

Do you know what one of my biggest pet peeves is? When people post recipes for food without a picture. Strangely enough, it doesn't bother me when I'm the one posting it. I wasn't able to get a good picture of them before they were gobbled up! I made these for a  friend who is not a regular Paleo eater, but has decided to do the auto-immune protocall for 30 days - meaning no grains, nuts, nightshades, eggs or dairy. (did I miss anything?) - so these were born, and they were gone fast. So without further delay, I bring you grain free, dairy free, nut free, egg free Blueberry Banana Pumpkin Muffins!

Blueberry Banana Pumpkin Muffins

Ingrediants:

2 cheetah banana's (ripe)
1 1/4 fresh pumpkin puree
1/4 cup maple syrup
1/2 cup coconut flour
1/4  cup melted coconut oil
1 tsp cinnamon
1/4 tsp nutmeg
1 cup blueberry

Directions:

Preheat oven to 350 degrees. Mash the two bananas in a bowl until smooth. Add the pumpkin, maple syrup and coconut oil - mix until smooth. Add the coconut flour, cinnamon and nutmeg. Mix until combined, then add the blueberries. Bake for 30 minutes, or until stiff.

Allow to cool and enjoy!

Hello Internet!

Okay - I admit it - I caved and am becoming one of those trendy health nuts (the amount of times people have referred to me as trendy, is a little bit concerning to me), who spends all their time blogging about healthy food instead of doing something more productive with their lives. Not that I have a problem with that,

This blog exists because of months of posting pictures of all my food on facebook, being asked repeatedly for recipes and as a result sending irritating facebook alerts to peoples phones, I have decided that yes it is a time to stop the insanity and just make peoples - and my - life easier! Sound good? I thought so!

But wait, you may ask, I havent seen you post food on facebook in at least a month - what is going on? Truth - I haven't - but I've certainly been busy cooking!

For those of you who either a) dont know me or b) dont pay attention to what I eat, here is a little information about my eating way of life!

I follow the Paleo Diet - which basically means if a ccaveman wouldn't have eaten it - neither will I. This means that all modern processed foods are a no go. This also includes all grains including wheat, corn, rice, rye, barley, refined sugars or processed dairy. I mean really people, do you think
Adam and Eve were chowing down on bowls of sticky rice - I don't think so.

Usually when I tell people I don't eat grains, sugar or dairy they go a little bug eyed and say "what exactly do you eat?!?!"

Eating only whole foods may sound very limiting, but in reality its not - you simply have to change the way you think about food. Yes, I limit myself to fruits, vegetables, meat, eggs, nuts and coconut - but what you can do with those things is absolutely extraordinary! Really people - and thats what I'm here to share you!

People often think that without grains, dairy or sugar that food gets boring or bland - and its my mission to share that having good health while still eating delicious food is possible! Of course there is a lot of why behind why I eat Paleo - the health benefits have been extraordinary for me, but I will save that for another post!
